Cover crops help promote soil fertility by absorbing nutrients that could have been lost due to leaching through the Fall and into early Spring. Typically any green growth from cover crops are turn into the soil in the spring to add back the nutrients they have used. Or they can be killed by the cold winter weather, yet hold the nutrients in their vegetative matter to be used as a source for compost in the spring or also turned into the soil. Plus their root systems give food and shelter to soil micro organisms in through the cold months.
