This was a very exciting coffee for me (Christian)to roast as, while in El Salvador, had the honor and opportunity to wonder through the trees this lovely coffee was grown on. Tablon 2, a beautiful and Magical place with a distinct micro climate not found anywhere else on the farm. Located in a tiny valley, or more of a dip, on the south eastern most edge of the finca. In the early mourning the fog collects in this valley giving the cherries just the slightest bit more of a struggle for them to develop such precise and unique cup qualities.
Cupping notes:
Aromas of wet coffee blossoms (strangely reminiscent of Tablon 2 itself) dried pineapple and raisins. Bright clean acidity with hints of black currant. Malty body with a maple syrup sweetness. Well balanced but to an extreme.
