This coffee is processed after harvesting by the natural dry process which adds to the pungency of its aroma and flavor. The complexity is not as delicate as the washed coffees of Ethiopia and both are considered to be some of the world?s finest flavorful coffees. Harrar displays a sharp winy acidity as its dominant characteristic with rich aroma and thick almost tangy flavor.
