You might ask what gives Assam tea its special characteristics? The Assam valley is dominated by the Brahmaputra River, a large, slowly meandering river which after years of flooding has deposited its rich loam over the area leaving the soil deep and sandy. Assam has a very hot and steamy monsoon season but equally important relatively dry and cool winters which are perfect conditions for growing the assamica tea bush. Add all this beauty together and you get the perfect breakfast tea, a medium sized leaf with some golden tips thrown in and brewing a strong color with slightly spicy malt flavor. Milk can be added as well as some agave nectar to make a great smooth flavor, but for the true tea lovers who like a bold cuppa, go for it! To achieve best results water should be boiling, 212 degrees and steeped for 4-5 minutes. If leaves are left to steep this tea may bitter. Use a level teaspoon per 8oz serving. 20 to 25 cups of tea can be made from 2 oz of loose leaf tea. Store in a dry place.
