Dung Ding Oolong Loose Leaf Tea from Taiwan has very smooth, light floral notes and an orchid-like harmony with a haunting finish. This Formosa Oolong is named after Mount Dung Ding whose fertile slopes produce some of the worlds finest teas. Tea production began here in the 1850's when tea planters from the Chinese province of Fujian emigrated to the small island and recognized its potential for growing Camellia sinensis. Oolong means "Black Dragon" as it was thought the very complex character of Oolong tea was similar to the spirit of the mythical creature. Formosa Oolongs are semi-fermented teas which actually undergo a 60% shorter fermentation period than other Oolongs resulting in a very complex character and taste. Entirely handmade the leaf is stunning and when infused is smoother than black tea, less grassy than green and has an orchid like balance and harmony. Many centuries ago a Chinese philosopher noted that the leaves of Oolong teas... should have creases like the leather boot of a Tatar horseman, curl like the dewlap of a mighty bullock, and unfold like a mist rising out of a ravine. We think Dung Ding Oolong certainly fits this description well and is a tea which is hard to resist. The recommended way to best enjoy Dung Ding is to briefly infuse with water which is then poured off. (Confession time! seems such a waste so we usually drink this infusion too. Experiment and decide for yourself.) Do re-infuse several times though when you will discover the exciting flavors and changing tastes of multifusion! Like all Oolongs Dung Ti is best drunk without milk and sugar.
